Pound Cake with Chocolate Amaretto Sauce






Happy 4th of July everyone. Unfortunately in Atlanta we are having so much rain and it is going to continue for days. I know lots of people have plans for today and hope they can still do them. This recipe is for a great pound cake with a delicious chocolate amaretto sauce. I hope you enjoy it. Have a great day.




Cake
3 c. all-purpose flour
¼ tsp. baking soda
¼ tsp. salt
1 c. (2 sticks) butter, softened
2 2/3 c. granulated sugar
2 tsp. vanilla extract
1 tsp. almond extract
6 lg. eggs, room temperature
1 c. sour cream
2 T. heavy cream

Sauce
1 c. heavy whipping cream
1/3 c. granulated sugar
2 (4 oz) bittersweet chocolate bars, chopped
2 T. butter
4 T. amaretto liqueur

Preheat oven to 325ºF. Spray a 12-cup Bundt or 10-inch tube baking pan with nonstick baking spray containing flour. Sift together the flour, baking soda and salt.  Sift again.  Set aside. In large mixing bowl, cream the butter, sugar, vanilla extract and almond extract with mixer on medium speed for 10 minutes, or until light and fluffy.  Add the eggs one at a time, beating well after each addition.  Reduce the mixer speed to low and add the flour mixture by thirds, alternating with the sour cream and ending with the dry ingredients.  Mix just enough to blend the batter after each addition.  Stir in the heavy cream. Spoon the batter into the prepared pan and spread evenly.  Bake for 65-75 minutes or until a toothpick inserted in the center of the cake comes out clean.  Cool the cake in the pan on a wire rack for 25 minutes,  Remove the pan and place the cake on a wire rack and allow to cool completely.  Serve with the Chocolate Amaretto Sauce.  Serves 16.
Prepare sauce:  Combine the whipping cream, sugar, chocolate and butter in a saucepan and cook over low heat, stirring constantly until thick and smooth.  Remove from heat and add amaretto.  Stir to mix well.  Serve warm or at room temperature.

  2. A little late, sorry. I love this---the great amaretto flavor. It looks and sounds delicious. It's the end of July and here in Chicagoland we turned the heat on for a while today--down to the 50's. Crazy! Hope you're having a good summer, my friend!
