
These cranberry bars are made with dried cranberries and sour cream. They are moist and so delicious. The crust is buttery and they have a golden crumb topping. So easy to prepare and you can enjoy them anytime.
1 c. butter, softened
1 c. packed brown sugar
2 c. quick-cooking oats
1 1/2 c. plus 2 T. all-purpose flour, divided
2 c. dried cranberries
1 c. sour cream
3/4 c. granulated sugar
1 egg, lightly beaten
1 T. grated lemon peel
1 tsp. vanilla extract
In a large bowl, cream the butter and brown sugar until light and fluffy. Combine oats and 1 1/2 cups flour; add to the creamed mixture until blended. Set aside 1 1/2 cups for topping.
Press remaining crumb mixture into an ungreased 13x9 inch baking pan. Bake at 350 degrees for 10-12 minutes or until lightly browned.
In a large bowl, combine the cranberries, sour cream, sugar, egg, lemon peel, vanilla and remaining 2 tablespoons flour. Spread evenly over crust. Sprinkle with the reserved crumb mixture.
Bake for 20-25 minutes or until lightly browned. Cool on a wire rack. Refrigerate leftovers.
