I love all the holiday flavors like peppermint, cranberry, nuts, spices like cinnamon, nutmeg and ginger. These little muffins are wonderful for a brunch or a snack. They smell so good while baking and are so easy to make. The addition of oil makes them so moist. Soo, let's think fall and I hope you will give these a try. I have included an optional cinnamon-sugar topping too.
3/4 c. whole milk
1/2 c. vegetable oil
1 lg. egg
1 1/2 c. finely chopped apples, cored and peeled
2 c. all-purpose flour
2/3 c. granulated sugar
3 tsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
Optional Topping
3 T. granulated sugar
1/2 tsp. ground cinnamon
Preheat oven to 375 degrees F. Line 12 medium muffin cups with paper liners.
In a small bowl, beat milk, oil and egg. Stir in diced apples and set aside. In a medium bowl, sift together the flour, sugar, baking powder, salt and cinnamon. Make a well in center and pour in wet ingredients. Stir just until moistened--batter will be lumpy. Do not overmix.
Divide batter evenly into muffin cups. Combine the 3 T. granulated sugar and 1/2 tsp. cinnamon and sprinkle over muffins, if using. Bake for 16-20 minutes or until a toothpick inserted in center comes out clean. Let stand 5 minutes and remove from pan.

Mmmm...it's not too early for apples and cinnamon! I made ginger cookies today and my house smells wonderful too. I have some early apples that would be perfect in these. Thanks!
